Ive shed loads of ginger - ideas? throw them at me, but they've got to be something i can use lots with. A meal with a "bit" of ginger in it doesn't use this up quickly enough

Savoury: delicious in a stir-fry. Complements fennel particularly nicely.
Sweet: too numerous to mention. Though I guess your classics like a fruit pie or crumble are the bit-of-ginger kind of thing you weren't asking about.
If you have a juicer, you could think about drinking rather than eating some of it. Blends nicely with a wide range of fruits, and I'd use more ginger for a jug of juice than for a similar quantity of regular dessert. For example, it's a classic with pears (with either apple or carrot as a reliable/staple base - put the apple or carrot through the juicer last and it'll flush the more sticky stuff).

Ginger jam? Loads of recipes on Google. Ginger jam/marmalade/preserve. It's a favourite of mine!

Crystallised [preserved] ginger.
Ginger, or ginger+honey, ice-cream is pretty KO too, and goes really nicely during winter on a slice of chocolate pud still hot from the oven.
Ginger + honey 'tea' infusions. Great for clearing out the sinuses etc during cold winters.
Then you could google the main recipe sites with ginger as the keyword and see what comes up, ginger loaf-cake, Thai ginger beef etc.

Ginger & lemon cordial? Ginger juice + lemon juice with stock syrup and cream of tartar (sp?).

I second freezing and crystalising. To freeze there is no need to peel it, freeze it as it is and grate whatever you need when you need it. You could also peel some, cut into slices or battonets, freeze it on trays then transfer it to freezer bags, good for chinese stir fries. As posted before, I make ginger garlic paste and freeze that in ice cube trays.
