- if I want to specify a maximum amount secured by the charge on form CH3, can this be variable (e.g. the property value from time to time), rather than a fixed sum?

Yes, though it would be unusual, as once registered the legal charge is a public document, and most lenders and borrowers would not be happy about the terms of the charge being made public.

Not so far as I know, but if you phone LR they'll tell you one way or the other.
