Simple delicious cake recipe

Here is a recipe for date loaf that I found a few months ago. It is simple, foolproof and everyone who has eaten it has agreed it is delicious.

Take 180g chopped pitted dates, 200g soft brown sugar, 55g margarine and soak in 250ml boiling water for 15 minutes.

Add 220g self raising flour, a teaspoon of bicarb and 2 teaspoons of vanilla essence and stir well.

Pour into an 8 inch loaf tin and put into the oven at 200c for 45 minutes.

Pros. Simple, foolproof, delicious and vegan.

Cons. Too moorish.

I have also used this basic recipe to make ginger cake, omitting the dates adding spices and both ground and stem ginger...equally delicious! I might try it as a walnut cake next.

Sounds great. I've got a couple of kilos of plums I was given yesterday that I've no use for and I think I might be able to pretend they're dates, eventually! (prunes, dates - potato, potato etc)

I'm always on the lookout for simple recipes to use at our Community Cafe and this sounds just the ticket. I'm on duty on Friday 31st so will give it a whirl, I especially like the idea of ginger cake as it's always been one of my favourites.

Doesn't 200 degrees kill off the "self-raising" of the flour?

(Haven't done cake since childhood, nor bread since something in the '90s, so probably have the wrong end of the stick).

Just about my recipe too except that I use butter and cook at 180C. Sorry if it's not vegan but we banned margarine from the home many years ago.

I made both the date and ginger cake for our Community Cafe today. I tweaked the ginger cake slightly by added a teaspoon of powdered ginger and about 20 grams more of stem ginger and for the date cake I added a teaspoon of mixed spice. Both cakes were wolfed down and at I've had to send the recipe to 14 people. I think the phrase "resounding success" is in order. Thank you for the recipe.

This is one of my 'go to ' recipes when I want a quick easy cake/loaf. I mix all the ingredients together then use my Bifinett breadmaker on the cake programme for one hour without the paddles. Foolproof! This means my microwave/convection oven can be used for other purposes at the same time.
