Could be a whole range of stuff from say Nasi Goreng or the like from Indonesia, to Singapore noodles, to Kwai Teow and many many other noodles dishes. They are all a variation on a theme. If you Google south east Asian noodle dishes you will find a huge selection. Noodles dishes mostly with vegetables, sometimes seafood are available from Vietnam to Malaysia to Singapore, the Philippines and Hong Kong.

Difficult to be specific but I am feeling hungry writing this.

Eureka!

I have discovered the name of the dish I was seeking.

It is "POKE", originating from Hawaii.

This recipe says it is rice based.
