Honey instead of sugar

I have a great friend who happens to make me a coffee any time I go round to see him
I always have 2 sugars
Last week he didn't use sugar but instead a couple of squirts of Blossom honey
WHAT a surprise
Still as sweet and a lovely taste
I have a bottle now and tried it in my porridge this morning
Bye bye sugar, I have just found a great substitute
apparently it's good for you as well

Not so keen on the taste myself as a alternative to my sugar with coffee (or tea) :)

Hmmm. According to a quick lookup, honey is 82% sugar and 18% water. How much benefit (other than all-in-the-mind) do those remaining trace ingredients confer?

does taste quite different from sugar syrup though so they seem to be having an effect even if they are only at trace levels
thinking about it there's probably only trace differences betwewn Lagaulin and Vodka also?

At about the age of 65 I began to suffer from hay fever (which I had never suffered from before). When I started using locally produced honey on my morning bircher the hay fever dramatically improved. I have no idea whether there is a link but the honey does taste very nice.
