I've used HF Holidays for walking holidays over the years. They do what it says on the tin, and I've had no problems. You don't say what sort of hiking/walking holiday you are looking for, so it's a little bit tricky to comment further. HF do appear to be one company that specifically offer walking holidays for singles (or 'solos' as they describe it). Their website has a wide range of walking locations, types, and activities. I have no connection with HF other than being a member (they're a membership organisation, like a co-op, but anyone can go on the holidays if you join or pay the non-member free).

Moderate hiking length and difficulty. I'm mainly interested in walking/holidaying in company with other similar people, perhaps mostly singles.

HF will do that. There's a range of holidays on their website, you may want to seek out the 'solos' holidays. Bear in mind that HF accommodation is mostly old style country houses in pleasant locations that HF own for the purpose. Also bear in mind that there may be other groups (e.g. HF Bridge holidays, HF music holidays) using the HF house at the same time as your walking group. Also dining arrangements may be on group tables, so there's no telling who you may end up chatting to, so there's company that you can take or leave, which may enhance or detract from your holiday experience depending on your preference. HF offer guided (group) and self-guided walking holidays at approximately the same times and location so you can go independent or go with the group as you wish, and pick and choose your evening socialising as well. HF holidays still have quite a strong social element.

Forgot to mention that if you book onto one of their group walking weeks, on any given day, there are two or more guided walks of different levels (length/challenge) of walk, so you can pick and choose. I suspect that if you go for a "self-guided" booking, they offer lots of walks of different levels.

It does depend upon what you want/where you want to go/how serious a walker you are. More information might get more focussed replies.

I have happily used both in the UK and Europe.

Other organisations you might like to look are Exodus and Explore.

Again, I have happily used both - but oniy abroad. Indeed, I have 2 holidays booked this year with Exodus - Portugal and Turkey.

It's not for everyone but since packing in work I've occasionally made use of YHA rooms to satisfy my desire for coastal walks. Only private rooms with en suite I should add.

The rooms are paired down basic but often in amazing locations where hotels can't be found, and in the shoulder seasons outside school holidays there's pretty much no youths to be seen, it's mostly retired age people.

I've used YHA rooms in Norfolk, Pembrokeshire, Yorkshire and Derbyshire and I'll probably add a couple more before 2024 is done.

I recommend KE (amusingly based in the car park in Keswick). I have been on 14 of their hiking/trekking trips in Europe and Nepal with mostly repeat clients who are travelling alone.
