Greece - I have been down there a few times at that time of year and you can be lucky, but it really can't be guaranteed and the weather can be awful for days at a time. Also at that time of the year lots of the islands are shutting down for the winter outside the main towns.
Canary Islands is a good bet. Reasonably priced flights, not too far, and if you pick the right resorts, not too tacky (mind you if you pick the wrong resorts then very tacky!), and reasonably priced. I have been down there in December and January and the weather has been fine for shorts/t-shirts during the day (evening get a bit chilly).

Been to the Algarve mid October and at the eastern end, where the water is shallow, it is still warm enough to swim.
I've also been advised that the Canaries are usually still OK then.

Something has come up which is complicating arrangements.
Looking at flights to Greece it seems real cheaper going out but less flights/more expensive coming back.
Will be having a think!

Malta, specifically Valetta, perhaps The Phoenicia, no beach, great pool and gardens though, and superb dining and bars on your doorstep in the evening (eg Straight Street), with an absence of tourists in October.
Not tacky anymore, more history than you can shake a stick at, and very accessible (the history, and getting there from UK).
