There are a number of useful videos on YouTube with a range of ways of ripening green tomatoes.

You can place them with a ripe banana, which apparently emits gases which encourage ripening. When I tried this many years ago, I got tomatoes which became somewhat red but very hard. Not what I would call ripe.

I usually make a storing green tomato chutney, here's a random easy looking recipe https://www.bbc.co.uk/food/recipes/gree ... tney_41573
The blight has struck all mine down so I've a couple of kilos or green toms in the fridge. I've seen recipes for Indian fresh green tomato chutney and I've got some chilli peppers ready to crop might give that a whirl.

That sounds like quite a lot of chutney! While chutney is indeed the "classic" use of underripe green tomatoes, might it make sense to use some of them in other recipes, such as a stir-fry or curry?

Just in case you were wondering "why a banana?"

"Bananas make other fruit ripen because they release a gas called ethene (formerly ethylene)," ... "This gas causes ripening, or softening of fruit by the breakdown of cell walls, conversion of starches to sugars and the disappearance of acids.
