No, they're sold down to a penny's worth; you can buy/hold/sell fractions of gilts. As I always buy a £ amount of them (rather than a specific number of gilts), all of my holdings go to two decimal places of a gilt. It's just the convention to talk about them as £100 (par) worth.

A coupon of 1% pays £ 1.00 per year for £ 100 nominal. So a coupon of 0.625% pays £ 0.625 (62.5 p) per £ 100 nominal
