I have effectively asked this question elsewhere on site but had no response so far.
Does anyone know if on a POS terminal it is possible for the owner to reset it to print out a card number in full on the transaction slip, rather than just the last four digits as has been the default for years?

Might not be possible - the last 4 digit rule is compliant with PCI DSS.
The only place you will see all digits displayed is on a card terminal which spits out a "Merchant's Copy".
