I think I originally posted this on the Fool site well over 10 years ago - I make it at least once a month over the winter time:


Coconut milk Mussels

Now that they are in season in the UK, I bought 3 lbs yesterday for supper (for 2). Here's what I did:

3lb cleaned scrubbed mussels
1 small onion finely chopped
1 small chilli finely chopped
2 stalks lemon grass finely sliced
1 clove garlic crushed
1 tbsp Thai Red Curry Paste
1 can coconut milk
1 handful roughly chopped coriander

In a large pan, I softened onions, chili and lemongrass for 3/4 minutes

then I added the garlic and Curry Paste and continued frying for a further 3/4 minutes

then I added the coconut milk and let that come up to the boil

then I turned up the heat and added the mussels and banged the lid on for a few minutes, shaking the pot to ensure they all took a turn at the bottom

then I checked they were all open and added the coriander, shook it all up again and served with some crusty bread

then I fell asleep as I had eaten too much - MrsSKOTCH said it was the nicest way she'd ever eaten mussels

I tried this recipe not too long ago and it was excellent.

To be honest I tried it twice, the first time I couldn't find the red curry paste so I whacked some green paste in, it worked well. The second time I used the red paste and it was even better.

I love mussels. They have been disappointing so far this season, the only ones available have been small and not really worth having. Last week was the exception, they were large, fresh and very tasty. This week back to small.

And where pray do you source your mussels? I will try my local fish man when he turns up next week.

Morrisons. In this area there are only 2 supermarkets that sell mussels and no specialist fishmongers within 20 miles.

When I lived in Brighton I was spoiled for choice, supermarkets sold them but there were also a number of fishmongers along the coast who sold amazing fish and shellfish. One fishmonger in Seaford was especially good for mussels, but Newhaven was the place for fish, straight off the boat and into the shop.

Those were the days.

So you are responsible for this great recipe! I printed it out years ago, it is certainly our favourite way to eat mussels.

Just looked again at when I posted it and it was 19th September 2003! Blimey

I have tried a few variations of this but always seem to go back to the original version
