We have noticed that the iPad charger gives 2 amps and the iPhone gives 1 amp.
We have been using theses chargers willy nilly on each machine.
Will we have damaged the iPhone please. It works OK atm.

No, you should be OK. The output specs are the maximum current the charger is capable of delivering. A device will only draw the current it needs. You may find the iPhone charger is a bit slow to charge the iPad though.
Mixing chargers and devices is only a risk if the output voltage of the charger is higher than that expected by the device, or if the polarity of the charger is the reverse of what the device expects. Neither should be the case here.

As well as problems of incorrect voltage or reverse polarity there can be significant danger to the charger if it is not rated for the current drawn by the device being charged. I'd like to think that expensive Apple chargers are designed to self-protect, but cheap chargers certainly aren't and can be destroyed if the device being charged demands too much current. In extremis they can fail catastrophically and melt or even burn.
